Serving Size: Roughly 12 cookie bites
1 cup old fashioned oats
1/2 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
2 tsp pumpkin spice (I use Whole Foods brand)
1 tsp vanilla extract
1 egg (or egg substitute)
1 tbsp chia seeds
2 tbsp raw honey
2 tbsp melted coconut oil
Chopped walnut (or other nut)
Heat oven to 300 degrees
Combine all dry ingredients together, mix together.
Combine all wet ingredients, mix together.
Combine wet and dry ingredients.
On a parchment lined cookie sheet, "drop" cookies using a spoon (this is a loose mixture, they will combine more during baking).
Cook roughly 12-15 minutes or until bottoms of cookie bites begin to brown.
